Ingredients You Need

- Sugar
- Light corn syrup: For that glossy, smooth finish! Also helps the popcorn balls hold their shape.
- Butter: I use unsalted butter. Add extra for greasing hands!
- Water
- Salt
- Vanilla extract
- Popped popcorn: Freshly popped popcorn works best. Keep it warm in a 250 F oven so the syrup coats evenly. Bagged salted popcorn is an easy swap and usually has fewer pesky unpopped kernels.
Step-By-Step Instructions
Make the best ever popcorn balls by following the simple steps below. Simply make the syrup, coat the popcorn, and shape into balls for a sweet, chewy treat you can enjoy year round.

Step 1: Make the syrup
In a medium saucepan, combine the sugar, corn syrup, butter, water, and salt. Cook over medium heat, stirring constantly, until the mixture comes to a full boil.
Stop stirring and continue cooking until the temperature reaches 270 F (hard ball stage) on a candy thermometer.
Step 2: Add the vanilla
Remove from heat and stir in the vanilla.
Step 3: Coat the popcorn
Carefully pour the hot syrup over the warm popped corn and mix with a fork to coat evenly.
Step 4: Shape into balls
Let the mixture cool slightly until safe to handle, then quickly form into balls using lightly buttered hands.

Substitutions
Missing something in the pantry? No worries; here are easy swaps to keep your popcorn balls just as tasty:
- Sugar: White sugar is classic, but brown sugar adds a rich, caramel note.
- Vanilla extract: Almond or maple extract both add a fun twist.
- Popcorn: Lightly salted or kettle corn adds instant flavor. Just cut back the sugar a little so it’s not too sweet.

Variations
- Halloween mix: Allow the mixture to cool slightly. Then gently add in ½ cup Halloween colored M&M’s or mini candy corn and ¼ cup Halloween sprinkles to the bowl and mix to combine. Finish according to the base recipe.
- Christmas mix: Allow the mixture to cool slightly. Then gently add in 1 cup red and green M&Ms and ¼ cup Christmas sprinkles to the bowl, then mix to combine. Finish according to the base recipe.
Expert Tips
- Shape fast, but be careful: The syrup sets quickly, so form the balls right away. Be mindful, though, it’s hot!
- Don’t overpack: Press them together just enough to hold. Overpacking makes them dense instead of chewy.
- Add the fun stuff last: Toss in sprinkles, candy, nuts, or pretzels right before shaping so they stick without melting.
- Work in batches: Making a lot? Coat half the popcorn at a time to make sure every kernel gets covered.
- Make them party-ready: Pop each ball into a cupcake liner or wrap in parchment squares for easy serving. For a festive touch, stick in lollipop sticks or colorful straws. Popcorn balls also make a great edible party favor; just wrap them in cellophane bags with ribbon, and they’ll double as both dessert and decoration.
- Cool before storing: Let them set fully so they keep their crispness and don’t stick together later.
How to Store This Recipe
Once cooled, wrap each popcorn ball in plastic wrap or parchment to keep them separate, then store in an airtight container or zip-top bag at room temperature. They’ll stay chewy and fresh for several days. Keep them in a cool, dry spot, as heat or humidity will make them extra sticky.

How to Serve Popcorn Balls
Popcorn balls make a nice stand-along snack or party treat, but are also enjoyed with other snacks and sips. Add them to a dessert table with treats like fudge or peanut butter fudge, cinnamon palmiers, or peanut butter blossoms. Sip on a ginger beer mocktail to cut the sticky sweetness with a little bit of bubbles.
