Many years ago, we visited one of Momโ€™s friends and she served us this delicious savory pie that I couldnโ€™t get enough of. When I asked her about it, she pulled out an old recipe card from her kitchen drawer and told me it came from a Bisquick box from way back in the 70s. I was intrigued. No crust? Just mix and bake? Could it really be that simple? It turns out, yes – it could be!

Impossible quiche is named so because it forms its own crust while baking, making it seem “impossible” that a simple recipe could make a fully formed quiche without needing to make a traditional crust. The magic happens when you mix all the ingredients together, and during baking, the flour or Bisquick settles at the bottom, creating a thin, crust-like layer. If thatโ€™s not amazing, then I donโ€™t know what is!

This has been a family favorite since. Itโ€™s perfect for brunches, family gatherings, or lazy weekend breakfasts. Itโ€™s always a hit at potlucks, too. This recipe has truly stood the test of time, deliciously nostalgic but endlessly adaptable to modern tastes.

  • Bacon: I use crumbled bacon for a nice textural contrast. Use turkey bacon if you want a lighter option. 
  • Swiss cheese: Melts into the quiche, making it rich and creamy. I recommend shredding the cheese yourself, as it melts better than the pre-shredded kind. 
  • Yellow onion

  • Milk: For a smoother, creamier consistency. I use whole milk, but feel free to use your favorite. 
  • Salt
  • Ground black pepper
  • Bisquick: The secret ingredient! It forms a light crust as the quiche bakes, making this recipe truly “impossible” to resist.

Step-By-Step Instructions

Impossible quiche is the perfect way to start your day – no crazy ingredients, almost effortless, and it looks so appetizing! Ready to make some kitchen magic? Just follow the 3 simple steps below:

Step 1: Prep

Preheat the oven to 400F. Lightly grease a 10-inch pie plate.

First, sprinkle your cooked bacon in an even layer across the bottom of the dish. Top it with cheese then a layer of onion. Follow this exact order.

Step 2: Make the batter

Next, beat the eggs in a medium mixing bowl. Add milk, salt, and pepper. Mix in the Bisquick until smooth. Pour the mixture over the pie plate over the other ingredients.

Step 3: Bake

Bake for 35 minutes until a toothpick inserted in the center comes out clean and the top is nicely golden brown. Cool on a wire rack for 15 minutes before cutting and serving warm. Enjoy!

  • Milk: Substitute with almond milk, oat milk, or any other non-dairy milk alternative if youโ€™re aiming for a dairy-free version. For a richer quiche, try using cream or half-and-half.

While this classic Bisquick quiche is already delicious, make it your own by adding your favorite mixins. If you need ideas, here are some of my favorite variations:

  • Who can say no to caramelized onions? Take it up a notch by caramelizing the onions first. Theyโ€™ll be richer and sweeter, and taste amazing with the bacon and Swiss cheese.
  • Swap out the bacon for cooked diced ham and switch to sharp cheddar cheese for a classic ham and cheese pairing. If you want a vegetarian version of this, replace the meat with some cooked broccoli florets.
  • Make an all-veggie filling by replacing the bacon with sautรฉed spinach and mushrooms, and chopped red or yellow bell peppers.
  • Replace bacon with spicy sausage or chorizo for a smoky, flavorful kick.
  • Add chopped jalapeรฑos (with seeds for extra heat, or remove them for a milder version) or a sprinkle of red pepper flakes to the Bisquick mixture for added spice.
