Notes
If using watery vegetables like zucchini, tomatoes, and mushrooms, drain them properly beforehand or sauté them first to remove excess moisture.
Pre-cook any mix-ins to remove excess moisture and ensure a crisp texture.
Avoid food waste by using leftovers like roasted vegetables and cooked meats to make this dish.
Always check for doneness - the quiche is done when it’s ‘just’ set in the middle and a toothpick inserted into the center comes out clean.
Allow the quiche to cool and rest for at least 15 minutes before slicing. This will help it set and make cutting easier.
Serve: Best enjoyed with some toast and warm cup of coffee. Serve with a fresh salad, avocado slices, or a side of fresh fruit for a light meal, or pair it with some roasted seasonal vegetables, parmesan potatoes, a light pasta, or slices of crusty bread for a more filling one. Store: Place leftovers in an airtight container and store in the refrigerator for up to 4 days, or in the freezer for up to 1 month. To reheat, warm in the oven, covered in foil, at 350 F for 20 minutes, or until warmed through. A frozen quiche can be warmed straight out of the freezer, but will take longer to reheat, about 30 minutes.
