Mine would undoubtedly be these bacon-wrapped pineapple bites, simply because bacon and pineapple are a match made in heaven. They complement each other so well, in flavor and in texture, thatโ€™s why nothing more is needed to make this recipe. Two ingredients, and youโ€™ve got finger food everyone will rave about!

Bacon-wrapped pineapple is delicious as is, but another reason why I made this recipe at its most basic is so you can easily customize it to your favorite dips, glazes, or seasonings. With add-ins or not, these perfect little bites are not only party-worthy, theyโ€™re great for enjoying at home, too. My kids love them as an after-school treat and my husband always requests them for game night.

Seriously, it doesnโ€™t get much easier or tastier than these bacon wrapped pineapple bites. All you need to do is prep your oven, wrap the pineapple chunks in bacon strips, and pop them in to bake. Easy, peasy, pineapple squeezy!

Ingredients You Need

  • Pineapple chunks: Expect to use around 24 pieces of pineapple.
  • Bacon strips: I use regular cut bacon – not too thin, not too thick. Choose a cut thatโ€™s just right, with enough thickness to handle the heat and keep its shape. Thin cut bacon will rip easily, while a thicker cut can overpower the pineapple. Also choose a good quality bacon thatโ€™s not too salty to achieve the perfect balance of flavors.

Step-By-Step Instructions

Making this appetizer is as easy as 1, 2, 3 – literally. Follow 3 simple steps below and your bacon wrapped pineapple bites are guaranteed to come out perfectly baked and perfectly tasty.

Step 1: Prep

Preheat the oven to 450 F. Line a baking sheet with parchment paper for easy cleanup. Arrange an oven-safe cooling rack on top of the paper.

Step 2: Wrap

Arrange the bacon horizontally. Cut the bacon in half, across the width. Wrap each piece of pineapple in a portion of bacon and secure with a toothpick.

I use canned pineapple because it lets us make this all year round. You may use fresh pineapple during the summer if you prefer. Just peel, core, and cut into 1-inch chunks, then wrap as usual.

Step 3: Bake

Place on the rack and bake for 25-30 minutes, until the bacon is crispy around the edges.

Variations

The strength of bacon wrapped pineapple lies in its simplicity. As delicious as it is, it can be customized in a hundred different ways to suit your preferences or an occasion. Try these super fun twists on the classic:

  • Go crazy with the glazes! Brush the bites with your favorite glaze before popping them in the oven. Among my favorites are soy sauce and brown sugar, barbecue, teriyaki, and maple.
  • Want to add a spicy kick? Sprinkle cayenne pepper or brush with sriracha before baking for a pop of heat. You can also add a slice of jalapeรฑo to the pineapple before wrapping with bacon.
  • Place a cherry on top of the pineapple before wrapping. I love this sweet, Hawaiian twist! You can also add other small slices of fruit. I love mango or peach for a tropical version of the classic.
  • Marinate the pineapple chunks before wrapping for an added burst of flavor. Spiced rum or a mixture of soy sauce, orange juice, and soy sauce are delicious options.
  • Roll the bites in brown sugar and sprinkle with a little bit of cayenne pepper before baking to get a delicious caramelized, spicy crust.

Expert Tips

  • Remove excess moisture: To achieve perfectly crispy bites, remove as much moisture from the pineapples as you can before wrapping them in bacon. Excess moisture can make the bacon soggy. After draining the juice, transfer the pineapple chunks to a plate lined with paper towels to absorb excess moisture.
  • Wrap securely: Itโ€™s important for the bacon strips to be long enough to wrap all the way around each piece of pineapple so that you can make a secure wrap. Just lay the bacon down, place the pineapple chunk in the middle, and pull the bacon up over the top, making overlaps, before securing with a toothpick.
  • Soak the toothpicks: You can soak the toothpicks in water beforehand to keep them from burning in the oven, although I didnโ€™t have a problem with them burning at 350F for 25 minutes.
  • Donโ€™t assemble too soon: This recipe can be made ahead, but if youโ€™re cooking on the day you plan to eat them, it’s best to assemble the bacon and pineapple right before baking. The juice from the pineapple can soak the bacon and split it if you assemble too soon.
  • Grill โ€˜em: This recipe is great on the grill. Pineapple spears would be more ideal instead of chunks, though.

How to Store This Recipe

Bacon-wrapped pineapple bites are best served immediately. If you made extra or have some leftovers, place them in an airtight container and store in the refrigerator for up to 4 days. When ready to use, reheat in the air-fryer or in a parchment-lined pan in the oven just until heated through.
