These bacon-wrapped pineapple bites are a game-changer. The sweet, slightly tangy flavor of pineapples perfectly complement the smoky, savory taste of bacon, which makes each bite deliciously satisfying. All you need to do is prep your oven, wrap the pineapple chunks in bacon strips, and pop them in to bake. Easy, peasy, pineapple squeezy!
Preheat the oven to 450 °F. Line a baking sheet with parchment paper for easy cleanup.
Arrange the bacon horizontally. Cut the bacon in half, across the width. Wrap each piece of pineapple in a portion of bacon and secure with a toothpick.
Place on the rack and bake for 25-30 minutes, until the bacon is crispy around the edges.
Notes
Remove as much moisture from the pineapples as you can before wrapping them in bacon as it can make the bacon soggy. After draining the juice, transfer the pineapple chunks to a plate lined with paper towels to absorb excess moisture.
Use bacon strips long enough to wrap all the way around each piece of pineapple so that you can make a secure wrap. Lay the bacon down, place the pineapple chunk in the middle, and pull the bacon up over the top, making overlaps, before securing with a toothpick.
It's best to assemble the bacon and pineapple right before baking. The juice from the pineapple can soak the bacon and split it if you assemble too soon.
This recipe is great on the grill. Use pineapple spears instead of chunks if you’re grilling.
