I still remember the first time I tasted potato fritters. It was at a family gathering, and my grandmother had just pulled a batch of crispy, golden fritters from the pan. I was hooked from the first bite! The soft, perfectly seasoned potatoes and the golden crispy outer layer were a match made in heaven.

Iโ€™ve made them countless times over the years, and have become my go-to comfort breakfast, especially on busy mornings. My kids love them on rotation with hashbrowns, potato waffles, french fries, parmesan potatoes, and garlic mashed potatoes as potato sides for our meals.

Potato fritters are perfect for any time of the year, as part of a breakfast or brunch spread, a savory side for lunch or dinner mains, or a party snack. They also make great dippers for your favorite sauces! Definitely one of my favorite ways to enjoy good old potatoes.

Ingredients You Need

Ingredients for potato fritters on a wooden background.
  • Potatoes: I use Russet potatoes. I recommend using starchy varieties like Yukon Gold or Idaho because they turn out smoother and fluffier when cooked.
  • Eggs: Help bind the mixture together, giving the fritters a light, fluffy texture.
  • All-purpose flour: Adds structure and helps achieve that crispy exterior.
  • Onion
  • Garlic
  • Salt
  • Ground black pepper
  • Olive oil: Used for frying, giving the fritters a delicious golden color and crispy texture.
  • Greek yogurt: For serving, use creamy, tangy Greek yogurt as a topping or dipping sauce.
  • Chives: Used as a garnish, fresh chives add a lovely pop of color and mild onion flavor.

Step-By-Step Instructions

Ready to dive into this deliciousness? Transform humble potatoes into crispy, golden bites in 3 simple steps. Letโ€™s get cooking and bring these flavorful potato fritters to life!

Step 1: Mix

First, peel and wash the potatoes. Coarsely grate with a food processor or box grater and add to a large mixing bowl. Add the eggs, flour, onion, garlic, salt, and pepper. Mix well to combine.

Step 2: Fry

Next, heat the oil in a heavy-bottomed skillet or frying pan over medium heat. Use a ยผ-cup measuring cup to scoop the batter and transfer to the pan. Press down gently with a fork to flatten the batter into an even circle. Do not overcrowd the pan.

Cook until the first side is golden brown and crispy, then flip and continue cooking the second side for approximately 3 minutes. Reduce the heat if you notice the fritters are cooking too quickly. Repeat until all the batter is cooked.

Step 3: Serve

Keep fritters warm in a 200F oven until ready to serve. Serve with Greek yogurt and chives. Top each serving with this garnish or serve the yogurt in a bowl as a dipping sauce.

Substitutions

Potato fritters call for simple, easy-to-find ingredients. If youโ€™re running low on an ingredient or looking to switch things up,here are some ideal substitutions:

  • All-purpose flour: If you prefer to use another type of flour, whole wheat or oat are good substitutes. You can use half all-purpose and half whole wheat flour or oat flour if preferred. You can also substitute with the same amount of a gluten-free flour blend.
  • Olive oil: No olive oil on hand? Use any oil of your choice – avocado, canola, walnut, and seed oil all work great. Even melted butter works!
  • Greek yogurt: Serve potato fritters with sour cream instead of Greek yogurt.
  • Chives: Parsley, green onions, purple onions, and shallots are all ideal substitutes for chives.

Variations

These potato fritters are delicious all by themselves, but why stop there? Just like versatile potatoes, these crispy treats can pair with just about anything. The possibilities for variations are endless, but here are a few of my personal favorites:

  • Add 3 tablespoons of shredded melty cheese like cheddar or mozzarella to the potato mixture. Cheesy, gooey potato fritters are sooo good!
  • Mix in fresh herbs like parsley, dill, or cilantro for added flavor and freshness.
  • Use regular potatoes with sweet potatoes for a unique sweet twist.
  • Fold in cooked crispy bacon bits, crumbled Italian sausage, or diced ham for some meaty goodness.
  • Want to add some heat to your fritters? A dash of cayenne pepper or a sprinkle of red pepper flakes will do the trick.

Expert Tips

  • Preheat the oil: Make sure your oil is hot enough before adding the fritters. Test by dropping a small amount of batter into the oil; if it sizzles immediately, itโ€™s ready.
  • Donโ€™t crowd the pan: Cook the fritters in batches to avoid overcrowding. This will help them cook evenly and youโ€™ll get that crispy exterior easily.
  • Wait to flip: Donโ€™t flip the fritters too early – give the bottom enough time to brown and crisp up. If they seem to be sticking, give them a little more time to cook before attempting to flip.
  • Drain on paper towels: After frying, place the fritters on a paper towel-lined plate to absorb excess oil, keeping them crispy.

How to Store This Recipe

Cool potato fritters completely before storing in the fridge or freezer. Once cooled, arrange the fritters in single layers in an airtight container. Separate with parchment paper if you need to stack them, then keep in the refrigerator for up to 3 days, or in the freezer for up to 1 month. Reheat them in the pan with oil until warmed through – this should help crisp them back up a bit.

What to Serve with Potato Fritters

There are so many ways to enjoy potato fritters! Enjoy them as is or with your favorite dipping sauce. For breakfast or brunch, top your fritters with a poached egg and fresh herbs then eat with a side of crispy bacon, smoked salmon, or sliced avocado.

For a hearty snack, serve potato fritters with burgers or sandwiches as an alternative to french fries. Pair with your favorite protein mains for lunch or dinner for a more complete meal.
