Ingredients You Need

Various labeled ingredients for a corn dip recipe, including sweet corn kernels, scallions, cheese, bacon, mayonnaise, sour cream, jalapeรฑo, black pepper, garlic powder, and onion powder.
  • Sweet corn kernels: I use canned sweet corn kernels for ease and convenience.
  • Bacon slices: I cook the bacon beforehand. I use crispy oven bacon or sometimes maple bacon for more flavor.
  • Mayonnaise: Use store-bought mayonnaise or make homemade mayo by blending egg yolk and a neutral-tasting oil.
  • Sour cream: Full-fat sour cream gives the best taste and texture.
  • Mexican shredded cheese: This blend has flavor and richness thatโ€™s not overpowering.
  • Scallions
  • Black pepper
  • Garlic and onion powder

Step-By-Step Instructions

Making creamy corn dip is as easy as one, two, three. In 15 minutes, youโ€™ll have an unbelievably tasty dip thatโ€™s uniquely savory, slightly smoky, cheesy, and perfectly seasoned!

Step 1: Prep

Drain the corn. Chop the scallions, jalapeno, and cooked bacon.

Step 2: Mix

Add the corn, mayonnaise, sour cream, shredded cheese, bacon, scallions, jalapeno, and seasoning to a medium mixing bowl. Mix until well combined.

Step 3: Chill and serve

Cover and refrigerate until ready for serving with tortilla chips or your favorite dipper.

Substitutions

  • Sweet corn kernels: Use fresh (better if grilled or roasted for added flavor) or frozen corn kernels if preferred. If using frozen corn, thaw and pat dry to avoid watering down the dip.
  • Bacon slices: Substitute with smoked turkey, turkey bacon, or diced ham.
  • Mayonnaise: Swap out with Greek yogurt, sour cream, or avocado mayo.
  • Sour cream: Greek yogurt or crรจme fraรฎche make good substitutes.
  • Mexican shredded cheese: Canโ€™t find this cheese blend? Use Cheddar, Monterey Jack, Pepper Jack, or Colby blend instead.
  • Scallions: Replace with chives, finely chopped red onion, or shallots.

Expert Tips

  • Drain the corn thoroughly: Excess moisture will make the dip watery instead of creamy. Pat the kernels dry with a paper towel for the best texture.
  • Use room-temperature ingredients: Let your sour cream, mayo, and cheese sit out for 10 to 15 minutes before mixing. This makes blending smoother and prevents a stiff dip.
  • Chop ingredients uniformly: Scallions, jalapeรฑos, and bacon bits should be evenly chopped for balanced flavor in every bite.
  • Chill for better flavor: Refrigerate for at least 30 minutes to help the flavors meld together. Overnight is even better!
  • Taste after chilling: The cold dulls flavors. Taste your dip again before serving and adjust the salt, pepper, or spices as needed.
  • Make it hot: Bake the dip at 375 F for 15 to 20 minutes in an oven-safe dish until bubbly. Add extra cheese on top for that melty, golden finish.

How to Store This Recipe

To store this loaded creamy corn dip, transfer any leftovers to an airtight container and refrigerate for up to 3 to 4 days. Give it a good stir before serving again, as some separation may occur in the fridge.

If you’d like to reheat it and enjoy it warm, bake at 350 F until warmed through and bubbly. Freezing isnโ€™t recommended, as the creamy base can separate once thawed.

What to Serve with Corn Dip

Serve this creamy corn dip with a variety of dippers. Scoop it up with tortilla chips, corn chips, or pita chips for a classic combo, or go lighter with fresh veggie sticks like bell pepper strips, cucumber rounds, or celery.

You can also spoon it into warm tortillas for a quick taco-style snack, or serve it alongside grilled meats, burgers, or hot dogs as a flavorful side. Hosting a party? Set it out with other dips like guacamole or homemade salsa for a full-on dip spread!
